So….this happened yesterday….

My first win in a big race! I won the Army 10 miler averaging 5:31 per mile 🙂 Unfortunately that was then followed by an 8 hour drive home, arriving back at 9pm, so this is all I have for you now, but I will have my race recap up on Wednesday 🙂

And besides….today is Meatless Monday day!

One of my favorite things about fall is butternut squash.

No, really.

I know most people see vegetables as a necessary evil, but for me, it is not really the case, and butternut squash is something I do eat for pleasure. I LOVE it! Not quite enough to trade sweets for it, but I would trade a lot of other things for it.

Thankfully Steve likes it too, so I can use it in pretty much everything over the winter months, and this was my reasoning for trying it out as fries. I tried with both sage and rosemary seasoning, and let Steve be the judge. He preferred the sage, so that is what I am sharing with you today!

Even if you are not a fan of vegetables, who isn’t a fan of fries? This way, you can get a little break from potatoes, and you may just discover something completely new that you love!

Butternut Squash Fries

Serves: 4

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Ingredients

1 medium sized butternut squash, peeled and cored

2 tbsp olive oil

1/2 tsp salt

1/4 tsp pepper

1/2 tbsp Sage

Instructions

Preheat the oven to 350 degrees F.
Cut the butternut squash into 1/2 inch thick slices, about the same size.
Toss them in the oil in a large bowl, and sprinkle with the seasonings.
Spread across two baking trays, leaving space between them.
After 15 minutes, carefully turn the butternut squash fries onto a different side. Repeat after 5 minutes onto another side until they are crispy and browning on all four sides.
Remove and serve.
